Light ruby, almost translucent. Aromas of red currant, wild strawberry, and rose petal drift over a hint of sea spray. Juicy, vibrant, and feather-light yet structured — a red that refreshes like a white.
Production
Short macerations for Tintilla and Syrah to capture fruit purity. Native yeast fermentations in open vats, six months in well-seasoned French oak, then blended with Palomino and rested eight months in stainless steel for clarity and freshness.
Vinyard
Tintilla and Palomino hail from Viña de Las Ánimas in Pago Balbaína (west-facing); Syrah from Viña Almocadén in Pago Carrascal (north-facing). Both on closed Tosca Albariza, limestone marl that gifts natural salinity and lift. Organic conversion across all plots.
Pairing
Serve slightly chilled with tuna tataki, grilled sardines, or jamón Ibérico with tomato bread. Equally at home in an ice bucket as at the table — Cádiz sunshine in liquid form.
