Deep violet with a dense core, Majuelos unfolds in layers: ripe plum, blueberry and wild blackberry, lifted by thyme, cocoa and a whisper of fine leather. The palate is expansive and structured yet fresh, with red and black fruit interwoven with spice, floral tones and subtle pastry notes. The finish is long, savoury and mineral, a seamless reflection of its origin.
Production
Grapes are harvested by hand into small boxes and rigorously sorted. A gentle cold pre-maceration precedes native-yeast fermentation in wooden tanks. Malolactic fermentation takes place in 500 L fûts, where the wine ages for 18 months in new and once-used French oak. Minimal intervention and gravity handling maintain the purity of fruit and fine-grained structure.
Vinyard
A field selection from three organically farmed plots — Nogales, Montecillo and Arenales — planted at 870–890 m. Gravel soils over deep subsoils enhance drainage and root penetration, while altitude and exposure slow ripening and preserve aromatic intensity. Meticulous vineyard work and low yields (~1.9 kg per vine) result in fruit of remarkable precision and purity.
Pairing
Ideal with slow-cooked oxtail or roast suckling pig, where its depth and freshness cut through richness. It also pairs beautifully with wild mushroom ragù, rosemary-spiced lamb or venison loin with juniper jus.
