Ripe plum and black cherry are layered with wild herbs and a hint of spice. The palate is plush yet vibrant, with supple tannins and a streak of freshness that lifts the finish and keeps the wine engaging and approachable.
Production
Grapes are hand-harvested and gently pressed before a 5-day maceration at 25–27 °C, extracting colour and soft tannins. After primary fermentation, the wine undergoes malolactic conversion for added roundness and is aged four months in stainless steel to preserve purity and freshness.
Vinyard
Vines grow on calcareous clay and iron-rich red soils in Salento’s warm Mediterranean climate. Long, sunny days and cooling breezes from the Ionian and Adriatic seas allow grapes to reach full ripeness while retaining natural acidity. Traditional alberello training helps vines cope with summer heat, producing concentrated, flavourful fruit.
Pairing
A natural partner for grilled lamb, slow-braised beef or aubergine parmigiana. Also excellent with mature pecorino or rich tomato-based pasta dishes.
