Production
Traditional vinification, vacuum dealcoholisation and four months’ maturation in oak for depth and texture.
Vinyard
Moderato’s grapes are grown in Gascony, in the heart of southwest France, where rolling vineyards rest on clay-limestone and sandy soils. The Atlantic brings cool breezes, while warm summers and crisp nights help the fruit ripen slowly, preserving the freshness and vibrant aromatics that are the key to making these wines so deliciously moreish.
Pairing
Serve at 6–8 °C with mushroom chicken, creamy pasta or spinach pie.
