Opulent yet poised, this Merlot layers ripe plum and black cherry with notes of cedar, cocoa, and spice. A supple texture and fine-grained tannins carry through a long, harmonious finish that balances fruit richness with savoury depth.
Production
Traditional fermentation with regular pump-overs extracts colour and complexity. The wine matures in French oak for added texture and spice integration, then rests in bottle before release to refine balance and depth.
Vineyard
From select parcels on limestone and clay soils, where slow, even ripening builds concentrated flavours and natural structure. Low yields and hand selection ensure only the most expressive fruit is used, resulting in a wine that captures the nuance of Castillon terroir.
Pairing
An excellent match for roast lamb with rosemary, beef bourguignon, or porcini risotto. It also pairs beautifully with hard cheeses like Comté or aged Gouda.
