Production

Hand-harvested and fermented in concrete to preserve varietal purity. Native yeasts lead a natural fermentation; minimal intervention keeps focus on fruit and structure. Short maturation enhances freshness and finesse.

Vinyard

Sourced from biodynamically farmed Graciano vineyards at 600 m in Rioja Alavesa. Altitude brings freshness and aromatic lift, while limestone soils add structure and mineral definition.

Pairing

Delicious with chuletillas al sarmiento or grilled lamb brushed with rosemary. Also excellent lightly chilled with spiced charcuterie on a warm evening.
