A deep cherry core with cardinal hues introduces an expressive, layered nose of wild red and black berries, rosemary, lilac, and crushed stone. The palate is powerful yet harmonious — ripe plum and blueberry wrapped in fine-grained tannins, with savoury notes of smoke, mineral and spice. The finish is persistent and complex, evolving beautifully in the glass.
Production
Hand-harvested and sorted fruit undergoes a cold pre-maceration before spontaneous fermentation with native yeasts in concrete tanks. The wine ages for 18 months in large 500 L French oak fûts, concrete and foudres, a mix that builds structure while preserving the purity and texture of the field blend.
Vineyard
A co-fermented field blend of Tinto Fino, Garnacha and Albillo from several parcels in Sotillo de la Ribera, planted between 890 and 930 m on sandy-clay loams and calcareous páramo soils. The altitude and poor, free-draining soils yield fruit with concentrated flavour, aromatic precision and lifted freshness.
Pairing
Superb with roast suckling lamb or venison loin with juniper and redcurrant jus. Its mineral depth also pairs beautifully with earthy dishes like wild mushroom ragù, slow-braised short ribs or mature sheep’s milk cheeses.
