Vibrant, sharp, and full of character, this rosé bursts with strawberry, crunchy watermelon, and a chalky edge. The nose is wonderfully perfumed with pomegranate, raspberry, and crisp pink lady apple, leading to a palate that’s ripe and aromatic yet focused and precise - a rosé that gives Provence a run for its money.
Production
Pinot Noir grapes are hand-harvested at night to preserve freshness and aromatic precision. After gentle de-stemming, crushing, and a brief 4–6 hour maceration, the juice is softly pressed to capture a pale hue and delicate red fruit notes. Fermentation in stainless steel at 12 °C using native yeasts preserves purity, finesse, and elegance. The wine then rests on lees for three months, enhancing texture and complexity.
Vinyard
Planted at nearly 1,000 m, the 35-year-old Dijon clone vines thrive on calcareous loam soils with clay and sand, north-facing to temper sun and heat. The continental climate—with low rainfall and sharp day–night shifts—preserves freshness, aromatic intensity, and natural acidity. This rare Spanish terroir yields wines of striking elegance, finesse, and personality.
Pairing
This wine pairs effortlessly with tangy, creamy goat’s cheese. It also shines alongside seafood dishes such as fried calamari or shrimp, where its lift and finesse enhance delicate flavours. True to its Spanish roots, it also complements classic tapas like jamón croquetas.
