Production
One of Spain’s most celebrated white varieties, Verdejo is night-harvested to retain freshness and aromatic intensity. Fermentation takes place in stainless steel tanks with native yeasts from the area at controlled temperatures of 16–18 ºC, ensuring purity and varietal expression.
Vinyard
At almost 1,000 m in Valladolid, the Ortega brothers show their daring extends beyond Pinot Noir. Here, at the banks of the Duero River Verdejo flourishes on limestone-franco soils under a continental climate marked by sharp day–night contrasts, preserving freshness, lift, and precision. This rare high-altitude terroir shapes wines of elegance and finesse, balancing vibrant fruit with mineral tension—proof of the estate’s mastery of both regional tradition and forward-thinking innovation.

Similar in style to Sauvignon Blanc, this Verdejo is a natural partner for fish and seafood. Its bright acidity and herbal lift make it especially delicious with classic Spanish dishes like gambas al ajillo.
