Lusciously sweet yet balanced, with notes of dates, fig, molasses, and dark chocolate. The palate is viscous and decadent, lifted by gentle acidity that keeps everything in check.
Production
After natural raisining, the grapes are gently pressed, and fermentation is halted early to retain natural sweetness. Long oxidative ageing in solera casks develops complexity, caramel depth, and a velvety texture.
Vinyard
Made from sun-dried Pedro Ximénez grapes, concentrated by the intense Andalusian sun. The chalky albariza soils and long growing season are key to building the sugar, ripeness, and aromatic intensity that define PX.
Pairing
A showstopper with blue cheese, sticky toffee pudding, or vanilla ice cream. For something more adventurous, drizzle it over roasted figs or even pair it with rich pâté.
