Production
Pure Pinot Noir grapes are hand‑harvested, cooled and gently pressed. The must rests at low temperature before fermenting in steel and wood; about seven per cent ferments in wood with selected lactic bacteria. After assemblage, the base wine undergoes a second fermentation in bottle and rests on its lees for 24 to 36 months before disgorgement without dosage.
Vineyard
Friuli Colli Orientali’s hilly DOC covers more than 2 000 ha around Udine. Perusini’s terraced plots, recognised as “historic” vineyards by Luigi Veronelli, lie on clay‑limestone soils. Organic farming and mechanical weed control preserve the environment and reinforce the character of the hills.
