Juicy and vibrant with blackcurrant, cherry and a hint of mint. Soft tannins and a supple finish.
Production
70 % destemmed, 30 % whole bunches, cold-soaked 5 days. Spontaneous fermentation and malolactic, matured 6 months in old oak. Unfined, unfiltered.
Vinyard
From a single dry-farmed vineyard on Mt Pangaion at 220 m, where silty-clay soils and cool nights enhance freshness and fruit purity.
Pairing
Serve with grilled lamb chops, roasted red peppers, or tomato and oregano meatballs.
