Amber-hued and aromatic, this Kisi brims with dried apricot, quince, and hints of honeyed nuts. Complex and textured, it’s both a wine and a conversation starter.
Production
Hand-sorted grapes underwent both pre- and post-fermentation maceration before gentle pressing. Fermentation in buried qvevri at 13–15 °C was followed by full malolactic conversion. The wine then matured six months in clay, allowing natural micro-oxygenation. No oak was used, keeping the expression authentically Georgian.
Vinyard
Planted in calcareous soils under a continental climate, the vines are double-Guyot trained with close spacing of 1 m between plants and 2.5 m between rows. This setup controls vigour and concentrates fruit quality. The extended growing season at altitude encourages full phenolic ripeness, while cool nights lock in acidity. Careful vineyard practices ensure healthy, balanced fruit for qvevri winemaking.
Pairing
Perfect with spiced poultry, roasted root veg, or grilled white fish. Also a superb partner for Middle Eastern mezze spreads — hummus, aubergine dips, and flatbreads make it shine.
