Expressive aromas of lemon peel, rosemary and verbena lead into a complex, herb-laced palate. Gentle sweetness meets subtle bitterness, with flavours of citrus zest, green herbs, and a hint of bay and mint. A creamy, almost pâtisserie note lingers, balancing freshness with botanical depth and finishing long, dry and savoury.
Production
Albariño is partially fermented, then fortified with absinthe to 15 % ABV before a 6-month barrel maturation with around 25 botanicals — including rosemary, thyme, fennel and sage. This slow infusion builds layers of aroma and structure, transforming the base wine into a complex, gastronomic vermouth.
Vinyard
Crafted from crisp, fruit-driven Albariño grown in Rías Baixas, where the Atlantic’s cooling influence preserves acidity and aromatics. The maritime climate and granitic soils lend a bright, saline edge to the base wine, essential for balance in the final vermouth.
Pairing
Brilliant with citrus-forward desserts such as lemon basil panna cotta, or as a refined aperitif alongside salted Marcona almonds, anchovy toasts, or Galician seafood.
