Tasari Grillo 2024
Sicily, Italy
Grillo (100%) · 2024 · 12% abv
Bright, easy drinking and shows a fragrant mix of jasmine and white peach. Soft and balanced its crisp minerality and seaside salinity bringing freshness and depth. Wonderfully easy to drink.
Production
After 4 hours of cryomaceration at 4 °C, grapes were softly pressed to protect aromatics. The must fermented at a controlled 16–18 °C in stainless steel tanks, preserving varietal freshness. The wine rested three months in steel before bottling, with no oak influence, ensuring a pure, vibrant style.
Vineyard
Vines are planted at 350 m on the Marsala hills, facing north and northwest to catch cooler air currents. The soils are calcareous-clay, giving good drainage while holding enough water to sustain summer ripening. Espalier training with 3,500 vines/ha keeps vigour controlled, while yields are capped at around 80 q/ha. Mechanical harvest takes place in early September when acidity and ripeness align.
Pairing
An all-rounder with seafood: from shellfish and crustaceans to fried sardines and calamari. Also works with lighter meats or Sicilian antipasti — the kind of wine you’ll want on hand at any table.
