Production

Often fermented with wild yeasts, left on lees for definition, and bottled under screwcap to lock in freshness. Intervention is minimal; extraction is gentle; the goal is transparency — slate, lift and precision.

Vinyard

A village blend drawn mainly from Thörnicher Ritsch with contributions from Enggass. Steep slopes, slate-rich soils and older vines combine to give intensity without weight — a clear expression of Thörnich’s cool, wiry style.

Pairing

Ideal with trout, grilled prawns, schnitzel with lemon, or simple salads with herbs. The acidity refreshes, resets the palate, and invites another glass.
