Pale salmon with copper glints, Viña Pilar Clarete offers an intricate aromatic profile of rose petals, wild strawberries, blood orange and crushed herbs. The palate is silky and expansive, layering redcurrant and nectarine with subtle spice and saline minerality. Bright acidity carries a long, savoury finish with a whisper of citrus peel and dried flowers.
Production
Hand-harvested fruit is gently pressed and co-fermented with native yeasts in 500 L French oak and concrete egg. Lees ageing for eight months in both vessels lends depth and complexity, while minimal intervention preserves the wine’s energetic, terroir-driven character.
Vineyard
A 50:50 field blend of Tinto Fino from El Pajarillo and Albillo Mayor from El Lebrero, grown at 920 m on sandy-limestone and franco-clay soils. The altitude and marked day–night temperature shifts ensure slow ripening, vibrant aromatics and crystalline acidity. Careful organic farming enhances fruit expression and textural finesse.
Pairing
A versatile partner for tuna crudo with citrus and herbs or smoked trout with crème fraîche. Its layered structure also complements saffron rice with prawns, grilled octopus, or chargrilled vegetables with romesco.
