Viditis in Anthesis 2023

Macedonia, Greece

Vidiano (98%), Roditis (2%) · 2023 · 13.5% abv

Aromatic notes of yellow apple, orange peel and wild herbs open into apricot, citrus peel and thyme on the palate, finishing with a chalky, mineral edge and gentle weight.
Production

Spontaneous fermentation in stainless steel at 16–18 °C with partial malolactic to soften acidity. Lees stirred gently for 8 months; no SO₂ added post-fermentation for 8 months to enhance palate weight.

Vinyard

Single-vineyard fruit from Mavrokopa at 220 m. Silty red topsoils over deep clay support dry farming, while a mountain–Mediterranean climate builds intensity and balance.

Pairing

Pairs beautifully with grilled octopus and citrus, lemon-braised artichokes, or roasted quail with thyme and farro.
