Listán Negro (50%), Vijariego (25%), Listán Blanco (10%), Castellana (5%) · 2023 · 13% abv

A nod to Tenerife’s 18th-century exports, this field blend is light on its feet yet full of intrigue. Bright red fruits, crushed herbs and smoky volcanic notes weave through the palate, alongside a gentle rustic edge and a thread of salinity. Delicate tannins and vibrant acidity give precision and length — a wine that’s as complex as it is drinkable.
Production

A traditional *vidueño* blend of local grapes — including Listán Negro, Vijariego, Castellana, Negramoll, Listán Blanco and Albillo Criollo — is fermented as whole clusters in open concrete tanks with ambient yeasts and no temperature control. Short maceration preserves delicacy. The wine ages for 12 months in 600 L and 225 L neutral oak before bottling unfiltered.

Vinyard

From the north-facing La Quinta vineyard at 430 m, where Atlantic breezes and frequent summer cloud cover slow ripening and extend the growing season. Volcanic basalt stones mix with clay and sand, creating a poor, free-draining soil that yields small, intensely flavoured berries. Old vines and organic dry-farming further concentrate character and structure.

Pairing

Its freshness and savoury edge make it a natural partner for grilled sardines, octopus or roasted peppers with mojo rojo. It’s equally at home with charcuterie or slow-braised rabbit, and its supple texture means it can carry lighter red-meat dishes without overpowering them.
