Production
Crafted from meticulously selected fruit and only made in standout vintages. After fermentation, the wine spends 24 months in a combination of American and French oak, layering spice, structure and complexity. It then rests quietly for three further years in bottle, allowing its aromatic and textural nuances to knit together into a deeply harmonious whole.
Vineyard
Tempranillo from the limestone-rich clay soils around Elciego, where low fertility and excellent drainage keep yields naturally low and flavours intensely focused. The area’s warm days and cool nights allow grapes to ripen fully while retaining vibrant acidity, resulting in fruit that balances richness and freshness — essential for wines destined for long ageing.
Pairing
Its graceful maturity demands bold, savoury partners: grilled ribeye or slow-roasted lamb are classic pairings. For something Iberian, try with presa ibérica or richly sauced braised beef cheeks. Aged cheeses and even dark chocolate desserts also find a perfect counterpoint in the wine’s depth and spice.
