Production
Fermented in new French oak barrels over 25 days to build texture and depth, the wine then spends a further eight months maturing in the same barrels, gaining complexity and spice. Extended bottle ageing for at least 18 months allows flavours to integrate and evolve, resulting in a wine that marries power with finesse.
Vineyard
Hand-selected Viura from Rioja Alavesa, where poor calcareous soils and a mild Atlantic climate combine to deliver fruit of concentration and tension. Old vines with naturally low yields add depth and structure, while the region’s cool nights help preserve freshness — essential for a wine built to age gracefully.
Pairing
A natural match for rich, savoury dishes — think Basque-style fish stews, roast monkfish or creamy shellfish risotto. Its nutty, layered character also complements aged cheeses, while its freshness cuts beautifully through salted almonds and tapas-style cured meats.
