Yaso Toro 2021

Tinta de Toro (100%) · 2021 · 14% abv
Bright and aromatic, Yaso combines redcurrant, morello cherry and violet with a touch of vanilla and toast. On the palate it’s fresh and energetic, with ripe tannins and a savoury undertone that speaks clearly of Toro’s rugged terroir.
Production
Fermentation in stainless steel is followed by 6 months in new French oak, then 6 months in bottle before release. The combination preserves fruit purity while adding subtle spice and structure.
Vinyard
Produced from 40-year-old Tinta de Toro vines rooted in sandy, high-altitude soils. The region’s dry climate and pest-resistant conditions allow old vines to thrive, producing intensely flavoured, small-berried fruit.
Pairing
Ideal with hearty, slow-cooked dishes such as pot-roasted lamb with chorizo and white beans, or with charcoal-grilled beef. Also excellent with rich tomato-based stews.
